I like "Beet this Burger" - an oat-based burger w/ beets for color, not taste. You can find the recipe here: http://www.johnrussell.name/recipes/burgers.htm. I have to admit that I haven't been able to get them to stay in a burger-sized patty, so I make little ones in a pan with a little oil, then eat them tucked in a pita or without bread.
