Greek menu suggestions with halloumi cheese

I'd like to cook up a Greek-based birthday meal for a good friend that features a relatively light menu that includes Halloumi cheese. Can anyone suggest a few possibilities for me to whip up? I'd also like to do this in their house, since they don't cook and their place needs to be enriched by cooking fragrances, so it can't use up every pot and dish they own. Simple and easy and wonderful is my goal. Any suggestions for easy Greek dishes are much appreciated.

MMMmmmm... I just LOVE halloumi grilled. Add some grilled marinated vegetables (eggplant, zucchini, tomatoes, peppers, potatoes), hummus, pita, and round it all off with some really good dolmades, and you've got a meal.

You can always add some grilled lamb souvlaki or some falafel, too. I love falafel. Easy to make, and surprisingly nutritious.

For convenience, you can make a moussaka ahead of time, and pop it into the oven when you get there.

And don't forget spanakopita. MMMMMmmmmm... i just finished dinner an hour ago and I'm salivating...

I don't think it's particularly traditionally Greek, but this is a DELICIOUS little dish! While fava beans are in season now, they are readily available frozen (I've found them at Whole Foods, but start looking in advance). This dish is really wonderful!

this would be great served with grilled lamb and fresh pita bread (with various dips/accompaniments), then finished off with an in-season fruit (my current favorite is pomegranate seeds) with Greek yogurt and honey for dessert. A healthy, satisfying, and delicious birthday meal!

I'd like to address the "cooking on site" aspect of your meal. Don't be afraid to do as much as you can prior to your friend's special dinner. It will be nice to have cooking aromas in the house but this shouldn't stop you from doing some prep work in advance. Whatever you do - bring decent knives, a cutting board, and a couple of kitchen towels.

A platter of greek appetizers: hummus, bab ganaouj(?spelling), greek olives, good feta, pita crudite and grilled veggies. Spanakopita and saganaki. Grilled shish kabobs (chicken, lamb, fish and/or veggie) and taziki sauce. A moussaka or pasticcio can be assembled at your home and baked at theirs for aroma. Enjoy.

I'd to a platter of Greek appetizers as KtMc24 suggests, grilled halloumi, and a simple Greek stew. Here is one I did recently that used rabbit, which is pretty typical in Crete. You could use chicken thighs instead. And can you actually have a Greek meal that doesn't end with baklava?

I have the UK version of Joy of Cooking and it has a really easy chicken dish that they claim is Greek-inspired. You make a bed of onion rings (as in, onions that have been sliced into rings, not the deep fried wonders) that have been tossed with olive oil, salt, pepper & rosemary, put some chicken pieces on top, then cover it all with more of the onion rings. Bake it til the chicken is done. You could also add a little fresh lemon.
