What is your favorite part of pig, the magical animal?

I have been eating some delicious pork belly recently; first in London, and more recently at Bun (www.eatbun.com) in New York City.

What's your favorite part of pig?

Well, other than bacon? I guess the shoulder then, done as Southern pulled pork BBQ or made into sausages!

Long ago, my Serbian Grandmother would roast a whole baby pig on Orthodox Christmas, (Jan 7th). The ears and tail would be done about half way through the cooking time, and we kids would get to eat them first!

That indeed is a silk purse from a sow's ear, srhcb.

Oops, sorry - forgot to answer the question.

My favorite part of the pig is the feet.

Plebian, I know.

bacon (whether from the side, belly or the back), ribs and belly (slow braised).

Belly and short ribs!

Particularly short ribs with fermented black beans and chili and lots of garlic, and soy sauce braised pork belly until the meat and fat are meltingly sweet.

My favorite part of the pig is whatever part is on my plate.

whatever part of the pig makes the prosciutto.

real hog head cheese is made from exactly what it sounds like, it's not easy to make but the results are fantastic. it won't be easy preparing this for some folks because you will have a hogs head staring back at you from a pot of boiling water.

BBQ Ribs (especially spare ribs -- much tastier than baby backs)
Grilled Tenderloin
BBQ Pulled Pork

The muscles
The fat (pork fat RULES!)
The skin
