Transmografied Christmas Leftovers...
During T-Giving, what we do with our leftovers starts just as many topics as how we prepare our turkeys or what sides we choose.
Did anyone do anything with Christmas Leftovers?
I made December 26th Lobster Risotto which has become almost as strong a tradition as Christmas Eve seafood. I usually do it with mixed seafood but this year I had all the lobster claws from Christmas Eve so it was lobster only.
Today I'm crocking Great Northern Beans with the ham bone from Christmas Day. There was plenty of ham left so that will be warmed and served alongside the beans.

I'm in the middle of making the potato rosemary bread from "The Bread Baker's Apprentice" with leftover Barefoot Contessa Parmesan Smashed Potatoes. I hope it works!!

We are still eating the coca cola bourbon basted ham because it was amazing. The Hubby has added shredded cheese to the potato gratin. Today I am working on NY's Eve menu. I think a pasta course.

We bought an 8 lb honeybaked ham and set it out for Christmas breakfast. Only a few slices were eaten, as we had so much other stuff. Hubby cut off a couple of slices for the two of us, and the rest of it went home with my daughter and her family.

Only made it home with a ziplock bag of leftovers :( The cheesypotatoes are gone. Only left with enough ham for a sandwich or two...sigh.

I freeze leftovers, rather than wasting good food, but sometimes they don't seem too palatable and I end up throwing them out anyway. Would you freeze...turkey without a gravy or liquid, ham slices? What would you always and never freeze?
