Save refried beans from their inevitable demise!
So SE'ers, get this: every time my roommate leaves town, she opens a can of refried beans, uses about a tablespoon to top her nachos, then leaves the rest of the can in a tupperware in our fridge, which I won't notice until much later and by then, it's growing mold. Never fails! Until now.
She's leaving on Saturday for a week, so I have to do something with this stuff. What's good to make with refried beans besides tacos? I thought of a seven layer dip, but I had to ask you all. (btw, they're made with black beans if that makes a difference.)

I suggest quesadillas. For a seriously quick dinner, I'll mix a bit of my favorite jarred salsa into refried black beans, spread it onto a tortilla, top with shredded cheddar or crumbled cotija, and let it sizzle away until it's toasty and melted. Very fast and very tasty. It definitely gets the job done.

I'm a fan of chowing down on the beans by themselves. A plate, scoops of rice, beans, salsa, cheese, extra chile - awesome.
Or burritos. Big tortillas, fill with same ingredients and whatever else you have.
We're big fans in my house of 4 layer dip - cream cheese, beans, salsa, cheese. Microwave!

I was thinking of the dip, too. It's a nice way to share the beans with others and make a yummy mini-feast out of them.
Frankly, I never eat refried beans. I usually use black beans wherever refrieds are called for. I can't justify consuming that much fat (which is usually lard!).

Maybe you could work them into soup form.
