Gnocchi question

So I want to make gnocci for Christmas Dinner - can I make them ahead of time, or do I have to cook the dough immediately?

Gnocchi freeze well in case you want to make them ahead of time, just freeze them on a half sheet and make sure none are touching each other on the sheet. Once they are frozen put them in a zip lock. Great idea!!!! (Cheering from the sidelines!!!)

If you want to make them ahead, you can shape and boil them, then refrigerate, and reheat in whatever sauce you are serving them with, or saute in butter and sage, as is my preference.

What they said. But...fresh gnocchi are better...

I never refrigerate fresh gnocchi because they tend to stick together. For some reason, they're a lot happier being frozen, even if you freeze them for one or two days before the event. To freeze, lay them out on a half sheet pan and make sure they have been liberally floured (but shake off excess). Freeze in a single layer until frozen solid, then transfer them to a ziplock bag.
