Five Basic Tastes
Really? Does the news media still not understand that there are five basic tastes? Or do you think this is representative of the general public's knowledge on the topic?
This is what I'm complaining about, FYI: Whose mami? Umami.

I thought I knew a lot about food but I just heard of Umami very recently. Somehow it never showed up in anything I've ever read! After reading about it recently I know what they're talking about but I had never heard it called "Umami." Guess I'm not as well read as I thought I was.

Aji No Moto, the company that exists solely because of umami (its name is synonymous with their invention, MSG, in Japan) is now claiming that there is indeed a sixth taste. I forget what it is, but they'e marketing a new product - a flavor enhancer based on yeast - to capitalize on it.
I heard recently that science agrees on umami, and that it will become part of textbooks from here on in. Apparently Aristotle identified sweet, sour, bitter and salty, and we've all been fine with that for quite some time. It's amazing that no one had really questioned it before.

I learned about umami in a college class on Food, Culture, and Society but until then, I'll admit, I had never heard of it. I do recognize that taste though, of course.
