Your favorite hot cocoa recipe

With winter approaching, I have an urge to get the perfect cup of hot cocoa. Swiss Miss won't cut it. I want something with real chocolate flavor and creamy texture. What's your recipe?

Hot Chocolate (adapted from Tyler Florence)

3/4 cup powdered milk
3/4 cup sugar
1/2 cup cocoa powder
4 ounces bittersweet chocolate

Combine all the dry ingredients in a large bowl and mix well. Take the
bittersweet chocolate and roughly chop it up to give a chunky but consistent size. Mix well with a wooden spoon and then store in a dry airtight container. To make the hot chocolate, simply add 1 cup of water per 1/2 cup of hot chocolate mix. Heat in a small saucepan over low heat, stirring with a whisk. Heat until hot, but do not boil, about 6 to 7 minutes.

Here's Pierre Herme's crazy good hot chocolate recipe:

2 cups milk
1/4 cup water
1/4 cup sugar
4 ounces bittersweet chocolate, melted

Bring the milk, water, and sugar to the boil in a medium saucepan, stirring until the sugar dissolves. Add the chocolate and, stirring with a whisk, heat the mixture until one bubble pops on the surface.

Pull the saucepan from the heat and whip the hot chocolate for one minute with an immersion blender or in a regular blender.

Serve immediately in large cups, or pour into a container to cool. The hot chocolate can be made up to two days ahead and kept tightly covered in the refrigerator.

To be honest, I heat 3 parts whole milk (or if I'm being really bad...half and half) to 1 part bittersweet or semi-sweet chocolate. Whisk to combine well until chocolate is completely melted. Scrape cinnamon on top and/or a dollop of whipped cream - or if you're lucky enough to have any, some home-made marshmallows.

Godiva chocolate & milk- just follow the instructions on the can.
along with the addition (choose one) a shot of Baileys, Sailor Jerry's Rum, Frangelico, GranMarnier, Peppermint Schnapps, Kahlua-so many possibilites!

You should try Mayan Hot Chocolate...it's pretty different!

Hi all
we just came back from the dominican with cocoa, and boy is this different from the ones I use, it has a distinctive taste/smell, My husband loves it, I don't drink sweet stuff, and to drink this pure is not my favourite.
I got a recipe for dominican cocoa from www.outbacksafari.com, and select "Did you know"
but My husband finds it to 'watery', so I do now the following:
4TBS fresh cocoa, in 2 cups water, with 3TBSP sugar and a pinch of cinamon, boil for 5 minutes, and strain the pulp, this cocoa is my chocolate base which I keep in the fridge, I poor some of this concentration to hot milk and then it is good.

I love my hot chocolate with a little nutmeg grated in.

I like my hot chocolate at night with some Horlicks mixed in. Horlicks is an English hot malted drink mix that's suppose to help you sleep. I like to use Schaffenberger sweetened cocoa mix. It's rich and not very sweet.

I make a paste of Valrhona cocoa powder, approximately 2 Tablespoons combined with 1/4 cup of whole milk. I add more sugar to taste, about 2 Tablespoons to start with, in a saucepan on medium heat. Stir continuously.
I add another cup or so of milk and about 2 ounces of Valrhona 70% chocolate chunked small, stirring until the chocolate is completely melted. I then add more milk, about 1/2 cup, if mixture is too thick and more sugar to taste, usually another 2 Tablespoons.
I then bring it just to the boil then pour into a mug.
Sip it slowly as you would a fine cognac and, with no distractions.
It's only you and your thoughts.
Hot cocoa well made is one of lifes utterly sensuous experiences.
