Squash and Apple Soup

Looking for a fabulous recipe for Butternut (or Acorn) Squash and Apple Soup to warm me up on these increasingly colder nights. Thanks in advance!

Barefoot Contessa has an apple and butternut squash recipe that I am making on Thanksgiving. Go to the food network website, and look in the episodes of the Barefoot Contessa, or it is in the Barefoot Contessa Parties cookbook. If you can't find it, let me know.

Toss a squash an onion a head of garlic and an apple in the oven and roast until soft, then puree with a little water/ stock and seasonings of your choice (pie spices, curry, cayenne, etc.) perfect every time.

I posted a recipe for Carrot-Apple-Ginger Soup on my blog. Just substitute butternut squash; it should be just as delicious. It's the fresh squeezed ginger juice that makes it so good.

I personally don't like "curry" in recipes like these. If you want a curry, make a curry, but don't use that god-awful grocery store curry powder.
