Shrimp stock - what to do with it?
I made shrimp stock tonight and want some good recipes to use it with. I was thinking a risotto but there was some lemon grass used in making the stock so am thinking of a Thai dish as well. Any ideas? Thanks.

Any fish soup - coconut milk instead of cream, and the rest of the Thai spices. And why not a Thai-flavored risotto?

Sounds like a great base for Lobster Bisque. If you like, you can simmer the lobster shells in the shrimp stock to fortify it.

For great pasta: Saute a couple of minced shallots, add a bit of wine, the shrimp stock and reduce a bit. Add cream, chopped chives and s&p. Add cooked thin spaghetti and toss. Squirt with lemon juice, sprinkle with more chopped chives and serve with simple grilled or poached fish.
