Pound Cake?

With all this talk of T-Giving, I thought I'd interject with this pound cake I made yesterday for my daughter's 19th birthday. (I still can't believe she's 19 but that's another story...)

Cream Cheese Pound Cake

1 1/2 cups of butter
1 (8oz) pkg of cream cheese
3 cups white sugar
1 TBSP vanilla extract
1 teaspoon almond extract
6 eggs
3 cups cake flour

Preheat oven to 325 and grease a 10 inch tube pan.

Cream together butter, cream cheese and sugar until light. Stir in the vanilla and almond extract. Add the flour and the eggs alternately, beginning and ending with flour. Pour batter into the greased pan. Bake at 325 for 1 hr. 15 mins. or until a toothpick comes out clean.


I made only one change - I had a container of mascarpone which wasn't used for its intended purpose and I subbed it for the cream cheese. I sprinkled sugar into one of those heavily sculpted bundt pans, sprinkled some almonds and hoped for the best. The cake took 1.5 hours in the bundt pan.
