Pork free stuffing?
The stuffing I was planning on making was a cornbread sausage stuffing, and I just found out one my guests is rather violently allergic to pork! Any cornbread stuffing recipe suggestions? I want something a little fancier than the bread-onion-celery I grew up...

Wow -- pork allergy is terribly unfortunate! But you can use chicken, turkey, veal, beef sausage (or just plain ground) of any sort. Add the onion, garlic, celery; try some mushrooms and dried cranberries. Lots of seasonings, you'll be fine.

Here's one that's meat-free that I use for an alternative. Simple, great for soaking up gravy, quite popular.

Add root vegetables, toasted nuts, dried fruit, roasted pears, apple, or quince, etc.
Mine will be vegetarian - I cooked up one batch of cornbread for it tonight. And I'll be making more . . . I might make a couple dressings. :)

Make a second stuffing in a small casserole for mr allergic. I never let guests with allergies spoil everyone else's dinner. Maybe even 2 ramekins worth minus the pork, thats all you have to leave out just no pork. While your making the main just put a small skillet on the stove and make them and bake them off seperately.

I'm with JerzeeTomato - your guest will feel bad if you change your original plans for her allergy. Make a small dish of stuffing without the sausage and bake it separately, and everyone wins.

There are many great stuffings that don't include pork. You could make cornbread/apple/chestnut stuffing or just substitute turkey sausage.

another vote for subbing in turkey sausage. I don't eat pork at all and most of the time, you can't even tell the difference with turkey sausage. It's also a lot healthier!

As a mom to an allergic kid, I agree with either subbing out the sausage with turkey sausage OR cooking a little separate dish of the stuffing sans sausage. You might actually freak out your guest if you serve them the one with the turkey sausage so be really clear that it's not pork. Also, don't forget about cross contamination when you are cooking. Of all the research I've done on allergies, I have never heard of a pork allergy. What a bummer - no bacon!
