Onion tart for breakfast
Did anyone else wake up hungry this morning?! I was ravenous, so I had a piece of onion tart that is among the leftovers. The chicken carcasses (two free range) are in the soup pot, so I'll be making soup tonight. I think lunch might be mashed potatoes and brussels sprouts; today is even better than yesterday! I hope y'alls Thanksgiving was wonderful.

If you have Julia Child's The Way To Cook the recipe is on page 393, called Pissaladiere, If you don't, here it is:
Lay one sheet of frozen puff pastry on a lightly floured surface to thaw while you prepare the onions.
Slice 4 cups of onions (any combination that you like -- I used some red, yellow, and a few shallots) and slowly saute in 3 T olive oil for about 25 minutes until lightly caramelized. Season with salt, pepper, and herbes de Provence while cooking, taste as you go. Allow to cool.
Gently roll pastry out to fit a tart pan or you can place it on a baking sheet. Prick a few holes in the bottom of the pastry. Crimp the edges. Sprinkle 1 T of grated swiss or parmesan on the bottom, spread the onions over the pastry, and sprinkle with 3 more T of the cheese. Lay some anchovies over the top if you like. Bake in 450* oven for 30 -- 40 minutes. You will like this!

Was it Alice Waters' onion tart? Ive sampled her tart recipe from the Art of Simple Food...it's delicious and I hate onions.
