Homemade salad dressing... ideas?
I'm thinking of a salad heavy on fresh greens, maybe some tomatoes, red onions... a standard fresh veggie salad. What do you use for dressing?
I usually go with white wine vinegar, fresh lemon juice, and extra virgin olive oil.
Ideas?

My favorite (and many that I've made this for) is to thinly slice red onion, put aside, mix honey and cider vinegar and then drizzle in olive oil, add salt and pepper and the red onion, let it sit for 30 minutes... it is great, especially with blue cheese and walnuts in the salad.

This is from The Enchanted Broccoli Forest, I make it all the time. Just use a glass jar with a lid.
1 part white wine
1 part half & half
2 parts olive oil
Dijon mustard
salt, pepper, cayenne to taste
shake it up
it's delicious if you're a mustard person

i like to use omega oils for my salad dressings so i used hemp oil or flaxseed oil a lot of the time. one family favourite is:
1 tbsp brown sugar
1 tbsp dijon or whole grain honey mustard
1 clove minced garlic
1 tbsp soy sauce
1/4 cup whatever type of oil
it emulsifies really well. goes great with all kinds of things.
we also love a toasted walnut, strawberry and baby spinach salad with equal 1 tbsp cider vinegar, 1 tbsp brown sugar, and 1/8 cup oil.

this is my favorite - a mustard balsamic vinaigrette. i think it was from cook's illustrated. i've made it so often that i have it memorized, and i always make sure i have the ingredients on hand.
1/4 c good olive oil
1 tbsp balsamic vinegar
2 tsp dijon mustard
about a tsp of chopped shallot
salt and pepper
snipped chives
i usually make it in a 2-cup measure and whisk it. it should emulsify nicely.

I don't measure much, but my standard is just salt, pepper, olive oil, and some sort of vinegar. To shake it up though I love adding different oils-- walnut oil and pumpkinseed oil are great.

1 clove garlic, smashed to a paste with 1/2 tsp. salt
Freshly ground pepper
1 Tbsp. Maille Mustard (or any good dijon)
2 tsps. balsamic vinegar
1/4 to 1/3 cup olive oil
Place garlic paste in bottom of salad bowl in which you plan to serve the salad. Grind the pepper, add mustard and vinegar into the bowl and whisk these ingredients to combine. Drizzle olive oil into the bowl very slowly and whisk till well emuslified.
At this stage I usually dump the washed, spun greens into the salad bowl and put the whole thing in the fridge till I'm ready to serve it.

dijon (or any kind of strong mustard) diluted with some olive oil
gorgonzola, a little mayo, and a little cream. and pepper of course
red wine vinegar, orange juice, olive oil
balsamic vinegar, salt, pepper, olive oil and honey
rice wine vinegar, soy sauce, sesame oil, canola oil, sliced green onions, grated ginger
just a few ideas. Just taste as you go along so that you get the proportions.

Ina Garten's Lemon vinegarette is simple yet delicious.
Fresh lemon juice
Extra Virgin Olive Oil
Salt & Pepper
It's great on any salad, especially with some nice Arugula and wonderful with fish dishes

Thanks for asking this, NSW! I can't make a decent dressing to save my life so I resort to (ack!) bottled fare. I'm going to write these variations down and see what I can do.

To your basic dressing of 3 parts EVOO, 1 part red wine vinigar, a little mustard, salt, pepper (perhaps some herb eg: oregano) -- if you add about 1 Tbs. honey, it makes a big difference. Shake all ingredients very well in a screw top jar.

I'm a huge fan of balsamic vinegar and oil, but if you're looking to switch it up a bit, maybe try out Creamy Key Lime Dressing.
