Fresh Fish vs Frozen Fish....isn't it all really frozen?

I prefer to buy my fish from a major supermarket such as A&P, Kings, Whole Foods etc....or from a local fish seller.

My girlfriend just wants to buy the stuff that is frozen in Trader Joes.

I know that almost all fish is immediately frozen on the fishing boats. I live in northern NJ and there aren't any boats nearby selling unfrozen fish.

When it comes to health and flavor...which do you prefer and why? Both issues are equally important.

We live in a state with 130 miles of coastline. Of course there is fresh (not frozen) fish available. talk to your local fish monger, i'm sure they'll be glad to tell you exactly where everything comes from.

I prefer fresh for flavor and texture. frozen seems mushy to me

Even Whole Foods sells "fresh, never frozen" fish (at least in my neck of the woods). Fresh fish is markedly better than frozen when it comes to texture, but that doesn't stop me from keeping flash-frozen mahi fillets in my freezer for a quick dinner.

I would point out that *most* shrimp is individually quick-frozen onboard the boats that catch them. Even in south Florida, it is exceedingly rare to find shrimp that have never been frozen. Because of this, I almost exclusively buy bagged frozen shrimp and defrost them myself.

There's nothing better than a freshly killed fish. I don't know where you live, but if we feel like cooking fresh fish, we head to the local Asian supermarket with the fish tanks. The fishmongers there are willing to gut, clean, and cut the fish for you, and in some places they'll even fry them for you. I've heard that frozen fish is often just as fresh as live fish, but I think there's a definite taste difference.

There should be some disclosure displayed about whether or not fish has been frozen. Unless it's caught locally, I think it's safe to assume nearly every fish has been previously frozen unless it's swimming, as in the fish tanks mentioned by Toasty Kitten.

Maybe it depends on how its been frozen and how long?
We've gotten plenty of fish from friends who are fishing aficionados that they have stored in the freezer briefly before being given, and the fish seemed to suffer no ill effects.
