Food to help heal

A coworker has had a family tragedy and we in the office are taking turns taking them meals. We've already got lasagna covered, and the key is to make something that freezes well, since the family is going to be in and out for the foreseeable future. Does anyone have any good ideas of unique casserole-type meals that will provide some wholesome comfort for these folks?

I make chicken and rice a lot - there are scads of variations on the theme - and will freeze it BEFORE I add the rice. When they're ready to eat, it can be dumped into a pot, frozen, on a low heat, the rice added when it's thawed and simmering, and there you are. I measure out the right amount of rice, put it in a plastic bag, make sure the instructions for the chicken are written in permanent ink on both the bag and the freezer container, and take it to houses with new babies, big illnesses, that sort of thing. My only general advice is to season it vigorously when you make it; you're usually seasoning a whole lotta rice.

And then there's King Ranch Casserole; you can google recipes for that. Any pasta with a red sauce can be frozen easily,too. Hearty soups like lentil or bean can be frozen; if they take milk, I usually add it after it's thawed. And there's chicken in a pot, or chicken and dumplings.

All freeze well

I make a beef stronganoff casserole that works well. You saute beef cubes with onions, garlic and some shredded cabbage (I don't add mushrooms unless I know they eat them), Then add some beef broth, 2 tablespoons tomato paste and 2 tablespoons vinegar, Salt and pepper, till the beef is tender. Then add some sour cream to make the color copper. Pour this over egg noodles. It can be reheated whenever and lasts a good 5 days in the fridge.
I have also made it with ground turkey.

When my husband's favorite aunt passed a year ago, I made baked ziti, whipped potatoes, green beans, rice, and regular mac and cheese. While I intended to freeze these, they didn't make it to the freezer. Also, perhaps a Jewish thing, because I can only remember lots of cakes and sweets after funerals, I baked pies as well. A hearty vegetable soup freezes well too.

Frozen in individual portions in those handy little plastic containers from the grocery store. Easy to thaw, good for single servings, quick.

My boyfriend and I broke up on Sunday and I got fired first thing Monday morning (probably for spending too much time on this website.) I ate cheese dip and ice cream last night and it helped a lot. :)

Turkey tetrazinni -- I adore the recipe that came with my Large Copco enameled cast iron pan. It is the real deal with layers of onions, mushrooms, fresh parmesan and linguine in a velvety sherry laced sauce. It freezes beautifully. The one short cut I take is to use canned low sodium broth (unless I have homeade stock.) You can also make it with chicken.

Darn, now I have yet another thing I want to make with my Thanksgiving leftovers.
