Favorite no-bake treats?

I have always considered "no-bake" or "icebox" cookie recipes to be kid stuff, but on a whim I made these chocolate oat bars, which are just incredible. So now I'm wondering what other good no-bake recipes are out there. Do you have a favorite to share?

I'm so glad you enjoyed them! Easy and awesome, aren't they? I made meringue cookies one time where you heat the oven, then stick the cookies in, turn it off and they're ready in the morning. Really cool. (But not as good as those bars!)

Magic Bars, or whatever you may call them (I think they are called Dolly bars in some places). Recipe available on a can of Eagle brand sweetened condensed milk and also here:

Everything delicious. You might call them kid stuff, since they are quite sweet, but I never met anyone who disliked them (except for those weird anti-coconut types)

Wow I'm an idiot: I never made them before (only had them from my mom) and I always supposed they were no-bake. But I was wrong. So I retract from this discussion, but stand by their deliciousness.

Well in the spirit of the holidays, I like this recipe for No Bake Pumpkin Pie. Enjoy!

Not a bar but a cake, and absolutely delicious. It's from Smitten Kitchen:

I use the Paul Newman chocolate wafers to make it. It's essentially layers of chocolate wafers and whipped cream that you let sit int he fridge for a while. I make it fairly often now.

These are appallingly low rent, but I love them! And people I make them for always ask for the recipe:
Melt bag of butterscotch chips in bowl over pot of simmering water.
Remove bowl from heat, stir in 2 heaping tablespoons of crunchy peanut butter.
Stir in 2 cups of crushed cornflakes.
Drop by teaspoons (or scoop with a small ice cream scoop) onto a parchment-lined baking sheet and refrigerate until firm (about 30 minutes).

You can also use half butterscotch and half chocolate chips.

In a pinch, I've spooned this stuff into little foil baking cups, let them firm up and then put them into tins and given them as last-minute holiday gifts!
