Egg salad...what's your secret ingredient?

I mix the chopped egg with a small amount of Hellmann's, salt, pepper & squeeze of lemon juice. Serve on toasted rye topped with thin slices of avocado. What's your best combination for a great egg salad sandwich?

I like to add curry powder.

Then I layer the egg salad on my (toasted) bread with a slice of sweet pickle and lettuce. Gotta have some crsipiness to counter all the soft texture!

I'm a purist. I like a very small amount of Best Foods Mayo (aka Hellman's) -- just barely enough to get it all stuck together. A tiny bit of yellow mustard is my "secret" ingredient. S&P.

I like it on lightly toasted seeded rye or whole wheat (one that doesn't have any noticeable sweetness to it). It's excellent in really fresh pita bread.

Add-ins... I usually eat it plain. It's so good, it really needs nothing. But, for variety, my favorite add-on is alfalfa sprouts. Sometimes I add a slice of tomato or some crunchy iceberg lettuce.

My mom likes sweet pickle relish in hers. Bleck. We always argue about this.

We do not do egg salad but we do deviled eggs. If I were to do a salad I would use the same recipe but chop the eggs up. There are never one left over. I think it would be a good salad if you do it that way.

Just enough mayo to hold it together - egg salad, tuna salad, chicken salad. This is key.

I like to put potato chips on the sandwich to add crunch.

I made it for my boyfriend's lunch last week and put a couple of slices of cooked bacon on each one. He loved it. I'm sure avocado or tomato would be lovely too.

Just a touch of mayo, some Dijon mustard, salt and pepper; toasted rye, lettuce and tomato. Avocado, sprouts, bacon -- those I must try!

I'm an egg salad purist too - eggs, mayo, a touch of yellow mustard, salt, and TONS of black pepper. No lettuce, tomato, sprouts, or anything on the sandwich. Though I do keep things ironic by using Nayonaise (vegan mayo) instead of the real thing, since it's what I always have on hand.

A little dry mustard + enough Hellman's to bind it! And of course, salt and lots of pepper.

Plenty of miracle whip, love that stuff! A little dijon mustard, lots of pepper, kosher salt, lemon juice, celery, shallots or red onion.

And my secret ingredient is/are Tony Packo's (famous hot dogs and pickles) Sweet Hots pickles and peppers for a kick of spice! Now I'm going to have to make some!

Tarragon and capers. Also a little Coleman's mustard. Otherwise, just mayo (Hellman's), S&P.

I've tried dijon, brown and other mustards. Has to be DRY mustard, and a little onion juice (shredded). Same as for deviled eggs, except I add celery to egg salad for a little crunch. Sandwich: great bread or toast with egg salad, tomatoes, bacon and crisp lettuce.

Ever mix egg salad and tuna salad? Another delicious sandwich combo.

The usual suspects (S&P, a bit of Mayo)....but I also add some diced red onion.

PerkyMac - that's one of my mom's faves. She loves tuna in her egg salad, and egg in her tuna salad, so much so that you can't really tell the difference between the two! LOL

Hellman's Mayo, a bit of soy sauce, a small amount of minced onion. Heaven. I usually eat my egg salad as is, but if on bread - the freshest rye with no lettuce, tomato, etc. Just egg salad on the bread.

I do my egg salad plain- hellmans and salt, no pepper. I love it on squishy white bread (like wonderbread!) or a soft dinner roll.

I also enjoy a little bit of chopped egg in my tuna salad every now and then. And unlike my plain jane egg salad, I prefer my tuna "everything but the kitchen sink" style, on any type of bread, toast, crackers, or green salad.

God, I'm getting hungry just thinking about it!

Mayo and mustard (and salt/pepper). The best is using Kewpie mayo (2d best being Hellmans). Then on sandwich bread. I like it English style, with cress, but I'm not going to buy cress myself.

I put dried jalepeno flakes in mine. Everyone should try it! There's a little bit of texture since it's dried, and it's hot but not too hot and goes really well the eggs.

I like thinly sliced cucmber. And a littl edried mustard mixed with the mayo.

Please don't use that Miracle *gag* Whip stuff. Nasty!

best foods, salt and pepper and -- garlic powder. Just a touch!

About 1/4c frozen peas (thaw them a few mins on a paper towel)! My hubby and kids aren't fans of onion or celery, but they love peas. I don't like peas, but mixed in with the egg salad I can tolerate it, and it feels healthy at least!

I like some dijon mustard, just a touch of mayo and some finely grated onion - onion juice is awesome.

Two eggs, tuna, a dod of lurpak slightly salted butter, salt & pepper all mashed up together.

Eat in whatever fashion you like!

Some other extras could be some spring onions. You could even try a little sweet chilli dipping sauce to give you a kick up the arse or maybe thats just me cause im obsessed with the stuff haha.

A touch of Spectrum organic mayo just to bind the eggs together, chives, a squeeze of lemon juice, salt and pepper. Occasionally I'll add in a handful of diced celery for crunch.
