cannoli shelf life
ok so how long do fresh cannolis last & how do i store? want to buy some up in da bronx this weekend to bring for turkey day--bad idea? good?

They will not last! A good place pipes each order as they come in, otherwise youl lose the crunch of the shell. I do not reccommend holding a cannoli longer than 1 night in the fridge (that's really too long though)

Definitely pipe at the last minute. The cream will seep into the shells and they turn into manicotti before you know it.
Keep the piping bag full of cannoli cream with a large round tip (so any mini chips can get through) in the fridge. Keep the shells in an airtight container on a shelf (preferably not the fridge).
If you're buying them from a bakery, they will sell you the shells and cream separately if they're worth their salt! My dad buys them that way all the time in Staten Island.

To be honest though....the filling is easy to make. Ricotta, a little marscapone, vanilla, orange zest, a little powdered sugar. Chocolate (the best you know of) nibs, pistachio & maybe even candied fruit of choice. The shells are the issue, unless you have a fryer for the shells they (great ones) are hard to come buy wholesale or retail. Granted this is....a west coast gal typing, so what the hell do i know? Haven't tried a ton o' places but Rocco on bleeker almost made me cry i was so happy.

The day before you can get them and if they were fried crispy they will soften just a bit. When I buy them I get them the day before.

Gotta pipe just moments before you eat them! Nothing worse than a soggy cannoli :-)
