Brine Bags for Turkey
I've tried using a brine bag for two years now and I can't seem to get enough air out to have the brine submerge the whole bird. Plus they have the worst zip tops ever. Any advice?

The Ziploc "Big Bags" have double-zip tops and work really well. I got the XL size for my 18-pounder and it fits with 2 gallons of brine just right :-)
Check my blog for a pic of my setup:

My husband has been using the Williams Sonoma ones for a few years, but yesterday while out and about he said he saw some at Linens N Things too.

I just use two tall kitchen trash bags...Put one inside the other. And after you get the turkey and brine in try to remove the air and tie the opening with a simple knot. I've been using them for the last 5yrs. and have never had a problem.

I'm not that crazy, but some people have objected to using trash bags because they aren't technically "food safe." I have also used a brand new (and washed) 5 gallon kitchen trash bin to brine in. Had to clear out half of the fridge, but it did the trick!

I end up completely submerging the bird in the brine bag and then -- because it never closes properly -- I tie it off with rubber bands and put the whole thing in a pot. I find that the bags always leak, so the pot is a necessity.
