Tempting Vegan Baking Recipes?

A friend asked me for vegan baking recommendations because her daughter is starting a baking enterprise at her school.... but not being a vegan myself, I've been hard pressed to come up with a list of great ideas.

I tried my hand at vegan baking with Pumpkin Currant Cookies (which were mighty tasty) but I'm hoping you Serious Eaters know of other scumptious vegan recipes?

If you do a recipe search on Chow.com for "vegan", a lot of what comes up will be baked sweets - Isa Chandra Moskowitz (Vegan Cupcakes Take Over The World, etc.) contributes recipes to them once in awhile. You can also check out some of her recipes on Post Punk Kitchen (theppk.com) - the vegan brownie recipe sounds especially good.

Definitely the PPK. Vegan with a Vengeance is one of my favorite cookbooks. Very flexible recipes and most don't take a long time to make.

I made some really delicious peanut butter cookies the other day that happened to be vegan...ingredients were flour, peanut butter, brown sugar, white sugar, and I Can't Believe It's Not Butter. The original recipe had an egg thrown in there but we were out of eggs. The cookies were soft and chewy and great when warm, and deliciously crispy when cooled. A vegan success!

Stupid easy: Box of cake mix + 1 diet soda - sprite style soda for yellow cake, cola for chocolate. Mix and bake. I made yellow fresca cupcakes and they were a hit.

I'll try to remember to post my super easy Applesauce Cake recipe when I get home - I can't seem to find it with Google. :(

Vegan baking is actually pretty easy when you sub Earth Balance margarine for butter and EnerG Egg Replacer for eggs in pretty much any recipe. Good rule of thumb, though - don't attempt the subs in recipes where the structure is dependent on eggs or butter (like croissants or quiche).


The above are all good recommendations, though I have to plug yeahthatveganshit.blogspot.com for goofy humor.

One of my favorite recipes happens to be vegan:

Applesauce Cake
1/2 c oil
1 1/2 c sugar
1 1/2 c applesauce

2 c flour
1 1/2 tsp baking soda
spices (cinnamon, cloves, nutmeg) to taste
raisins (about two handfuls) optional

45 minutes at 350 in a greased bundt pan

add vanilla frosting for sweet tooths

I Can't Believe It's Not Butter is NOT vegan. I just double checked on their web site: Are any of your spreads dairy and lactose free? No

I've never baked vegan, but I do have two great tips:

1. Butter substitute -- Earth Balance Spread is vegan (made by the same company that makes Smart Balance). I've seen it in markets, but not commonly. You may have to request it. Or try a Whole Foods type place. Used to be sold at Trader Joe's, but like almost all things TJ's, they went private label with their "margarine". Of course, it may still be vegan.

2. Egg substitute -- I've used this when I discovered too late that I was out of eggs for pancakes or muffins or meatloaf. For each egg to be replaced, combine 1 tablespoon flaxseed meal with 3 tablespoons cold water. Let stand, stirring occasionally, until goopy (consistency of raw eggwhites), 5-10 minutes.

Some important considerations in flax-for-egg cooking:
...will not work in recipes where the eggs are needed for leavening rather than body
...fat or other moisture in the recipe may need to be increased for texture
...foods containing flax brown MUCH more quickly, so watch carefully! Some recipes better at lower temp (pancakes especially)

One other thing: Crisco shortening is vegan and is now free of trans-fats. Spreads, margarine, and even butter, contain a lot of water, and are therefore not suitable for certain purposes (e.g., greasing pans, etc.).
