Carrots are economical and available year round. Eating just one carrot a day is like signing a health policy! Can be eaten raw with dips, grated or marinaded for salads, roasted for an entree side, added to sauces & stews and of course there is always carrot cake! How do you use this root vegetable? Raw mini ones, carrot/raisin salad, brown-sugar glazed and Morning Glory muffins are a few of my favorites.
