Impressive food

What is the most impressive dish/meal you have ever made to wow that special someone? I once made a Moroccan Chicken Pie which took at least 4 hours and when it was done at 11pm, my date wolfed it down not so much because it was good (it wasn't) but because he was starving! In my defense, I was still in the early stages of learning how to cook. What did you make, how long did it take you, and most importantly, did it work? :)

A few years ago, I made a lovely spring meal that featured special citrus. I was just starting to get into really great food, so it took me longer to make back then than it would today:

1st course: salad of slices of roasted beet, blood orange, thinly sliced red onion, drizzled with extra virgin olive oil, honey, salt, pepper

2nd course: meyer lemon and ricotta ravioli (and I made the ravioli dough BY HAND) served in a meyer lemon butter reduction

3rd course: ruby red grapefruit and prosecco granita with a lemon-mint foam (ha ha, how pretentious)

I worked my ass off on this meal (I got up early to shop for stuff and spent all day prepping - mainly hand-rolling pasta dough, which I will never do again), and the jerk I made the dinner for didn't even have to decency to bring over a bottle of wine (after he had said he would) and didn't appreciate the meal and then fell asleep on the couch before dessert. Needless to say, that relationship didn't last very long.

i'm sure you boys want to impress but don't want to do a lot of work. do something simple but yummy. start with a light salad (charm city cupcake has a good idea) or do a fresh mozzarella w/tomato, basil combo. this could also be an appertizer for when they arrive. throw in some roasted reppers or eggplant. for dinner go light. maybe do a fish like tilapia--you could stuff with some spinach and tomatoes. serve w/roasted red potatoes. for dessert do some strawberries, maybe half dipped in chocolate w/fresh whip cream. make the cream while they are in the apt. it is so easy and so quick. this will impress them. i would go simple but delicious.
