Favorite non-pie apple recipe
I just picked up a bushel of honey-crisp apples and would love to make something other than pie or apple crisp...any suggestions?

Alton Brown's Apple Cake from his book, I'm Just Here for More Food:
ingredients:
2 sticks unsalted butter, at room temperature
2 cups white sugar
2 large eggs
1 TB vanilla
2 cups all-purpose flour
2 tsp baking soda
1 tsp kosher salt (or 1/2 tsp table salt)
1 tsp ground cinnamon
1 tsp freshly ground nutmeg
3 large apples (I like galas), cored and diced into 1/2" pieces -- no need to peel them
2 cups chopped nuts (I like hazelnuts, but pecans or walnuts would work fine)
method:
Preheat the oven to 275F and prepare a bundt pan with some butter or no-stick spray.
Cream the butter and sugar together until the butter is fluffy and noticeably lighter in color. Scrape down the bowl and add the eggs, one at a time, mixing well after each. Add the vanilla and mix well again.
Mix the dry ingredients together and whisk to combine. Pour the flour mixture into the butter/sugar/eggs and mix until just combined -- don't over mix once you've added the flour.
Next fold in the diced apples and chopped nuts by hand. Pour the batter (not really -- it's way too thick to pour -- more like plop) into the prepared bundt pan, spread it out evenly, and bake for 1 hour and 45 minutes. Once it's done, allow to cool in the pan for 15 minutes before turning out to cool for another 30.
Dust with powdered sugar if you like. You can serve it by itself or with some vanilla ice cream (really good that way!)

Apples, sauerkraut and pork make a particularly wonderful pairing especially this time of year. Use the regular Central European spice combinations with apples, kraut and any of the later; smoked sausage, pork chops or ribs or all three for that matter. Try this recipe;

Apple bread pudding is delicious. Use a basic recipe and add sauteed in butter and sugar apples. Or throw them into your salads with grapes,greens, blue cheese, pistachios and a vinaigrette.

Warm Cinnamon Chunky Applesauce (I try to include a bowl of it on the dinner table at least 3 times a week) and Apple butter. I also like to make Cinnamon-Apple Oatmeal (with steel cut oats) during the winter!

Honey crisps? Don't know about recipes, but eat as many of those babies straight up as you can - they're the best!

I totally agree with Emily about the honeycrisps--I definitely would not cook them, as they're totally delicious raw!!

I attended a party last night that served apple bellinis. They were made with fresh apple puree and prosecco, and I think that they had some mint in them. Unfortunately, I was working the event and could not indulge, but if you have any equipment that could puree apples, I'd give it a shot!
