I'm really looking for a resource for simple, filling vegetarian entrees (not just veggie side dishes). Thanks!

Some good ones have already been mentioned.
Orangette, while not strictly vegetarian, has plenty of vegetarian mains.
Albion Cooks is vegetarian and has links to a number of other vegetarian blogs.
And my blog, Blossom to Stem, is vegetarian (though sadly, not updated quite as often as it should be...)

I once had a friend who said "I only eat vegetarian animals."
I have a vegetarian blog, too, and though I haven't kept it up, it has a lot of good, flexible recipes in it, leaning a bit toward Jewish classics: recipes at random.

Cheap Healthy Good is mostly vegetarian, and there's a biweekly column called Veggie Might on that blog that is vegetarian.

I just created a blog, it is at www.nosaladforme.com. My blog is about helping out new vegetarians and sharing QUICK and EASY vegetarian recipes, most of the recipes I post will only have a few ingredients so that you can make them without having to run to the grocery store every night. I plan on listing many recipes along with my blog. I only have one entry up right now, but expect to see something new weekly!
