Avocado Recipes
I am absolutely in love with avocado, and I'd really like to find uses for the strange fruit other than eating it straight out of the skin (with honey and cinnamon for me) and guacamole. What was also nice was mashing it with banana and stir in yogurt, but I'm not crazy about bananas. Does anyone have any nifty recipes?

you are on your way with bananas. in morocco they make shakes/smoothies out of avocadoes and bananas-& they're delicious---just add 1 banana, 1 avocado (or 1/2) milk, some honey or sugar and blend. sounds weird but so refreshing!

A restaurant here in my hometown makes Brie & Avocado Quesadillas...and they're real easy to make at home. You could add apples for crunch and sweetness, although I add chicken and dip them in salsa.

As a tropical fruit they are compatible with most other tropicals, so experiment a bit. But a nearly transcendental combo is avocado dice combined with mango dice. So delicious. There is something about these two fruits that is just a match made in food heaven!!! Very good with a little minced onion, minced hot chile peppers and cilantro, too.
Also, my very favorite veg sandwich. Toasted whole wheat spread with half an avocado, some sliced mozarella (or swiss or aged provolone), sliced ripe tomatoes, red onions, alfalfa sprouts, salt to taste. Sometimes I add a bit of ajvar (a fantastic roasted red pepper spread) to the other slice of bread.

Avocado and baby shrimp salad -- yummy! Toss with a homemade vinaigrette.

I make a great avocado, sweet onion, and tomato salad. Just cut the avocado and tomato in chucks and slice up the onion. then add some balsamic vinergrette dressing ( I use Cardini ) put in the frig and let it marinate for an hour are so. My friends love this salad and so easy.

Avocado margaritas!!! Soooo, soooo good. Sounds gross, but I promise, super tasty, especially if you're an avocado lover. :9

I jumped in to write about my favorite sandwich but LoCo beat me to it. My variation uses a rustic bread, good quality mayo and a good sprinkle of salted sunflower seeds (shelled of course). I haven't used the roasted peppers but otherwise we are on the same wave with the ingredients; and no, I'm not from California ;~)

czken, I know a lot of people put cukes on that sandwich too. The salted sunflower seeds sound good -- avos are basically a nut, so should be tasty... I'll bet cashews would be awesome...
But... um... er... MAYO??? No offense, but mayo and avo just turns my tummy... especially when somebody puts it in their so-called guacamole!!!
BTW, my bro gets raves for his hummus/guacamole blend.
And I should have said that I love avo on grilled chicken sandwiches -- no mayo, of course! ;-)
Did I mention I have an avo tree in my garden? It's loaded right now... I picked my first tester a couple of days ago. If they're mature, y'all should drop by for my world-famous guacamole...

On more than just a few occations I have repaced the mayo with soft cream cheese. The idea is to hold the sunflower seeds in place until they make it into your mouth. As I age, I'm replacing mayo with either white yogurt or light sour cream with equal satisfaction. Did you note my use of the term "good quality mayo"? No mayo does not belong in guacamole...

black beans, mandarin oranges, diced ripe tomatoes, diced onion, diced avocado - dress it with a splash of lime juice and a healthy chopping of cilantro - DELICIOUS!

What about avocado soup? Here's the recipe:
Avocado Soup
Ingredients
4 ripe avocados
1 jalapeno pepper, seeded and chopped
2 garlic cloves, minced
1 Tbs. lime juice
1/4 C. sherry
3 C. chicken broth
1 1/2 C. heavy cream
Salt and pepper to taste
Fresh parsley sprigs
Directions
Combine avocados, jalapeno pepper; lime juice, sherry, and chicken broth in a blender and puree. Stir in cream and sprinkle with salt and pepper. Chill until ready to serve. Garnish with fresh parsley. This dish is a little rich but very good.
Or, you can always put avocado into sushi...it's delicious :)

I like to mix avocados with sun-dried tomatoes (along with a dash of salt and pepper) and eat on crackers.
Also "the salad"... fancy lettuce, mandarin oranges, candied pecans, brie, avocado, thinly slice red onion with a orange-vinagrette.

I tried a new sandwich combo, and it was delicious:
A good bread slice, toasted, topped with peanut butter, banana slices and avocado slices, drizzled with honey and sprinkled with a dash of cayenne pepper. Wow!
