Halibut is the overall winner here. Cod is the champion for Fish and Chips and Red Snapper is my favorite in most ethnic recipes (hispanic and mediterranean).

Salmon first, then either Lake Superior or John Cross (i.e., Lake Michigan) Whitefish, then Canadian Lake Erie Walleye. (No, you don't want Walleye from the Michigan side ... we get all the green gunk washed up here in Luna Pier ...

Yellowtail (hamachi in Japanese) -- especially the cheeks, lightly salted and broiled (hamachi kama).

Mackerel or bluefish - love the "fishy" fishes! Here in the Midwest, a lot of people literally want fish that tastes like chicken.

cod, halibut, salmon or Fresh Tuna. I grew up on cod, twice a week, and hated it because my mom always cooked it the same way, Fried. (yuk) NowI have to admit its my favorite. (broiled) but there is nothing like a fresh grilled Tuna steak!

Halibut, tuna (all sorts), salmon, anything that has good texture. I was raised on white fishes that were cheap and easy to get in Boston, and now I can't eat cod, haddock, or "scrod." Too many nights seeing it broiled and sprinkled with paprika. :-)

Currently it's halibut. There is an amazing seafood store near me that always gets the freshest fish. The owner told me how to cook the halibut the first time I got it. Make a sauce out of Dijon mustart, olive oil, thyme, salt, pepper, and fresh lime juice. Let it marinate for a bit and then bake it for 20 minutes at 400 degrees. It is HEAVENLY.

God ... the list is endless here. I used to live in Alaska and we used to catch our own halibut and king salmon so those have always been favorites of mine. I now live in Louisiana and must say that catfish and red snapper are on the list as well. I spent some time in Florida and would die for a fried grouper sandwich. And I also love shark and swordfish. I'll stop now before the drool hits my keyboard and shorts out my laptop. Great question!

I love trout and coley and arctic char. Also salmon and cod, which I only tend to buy when we are making very traditional Scandi type meals. For smoked fish, I like mackerel and trout. Tinned, I like tuna.
I wish I liked herring and eel, but I just don't.

Speaking of tilapia, I just visited Israel where I had a wonderful tilapia meal. They cleaned it, left it whole and scored both sides about three times. Sprinkled with a little flour and plunged into the deep fryer just long enough to crisp the outside and leave the inside soft and succulent. Served with a simple salad and some flat bread. They call it St. Peter's Fish. Great!!!

I don't usually like dark or oily fish. I love halibut, cod, snapper, and salmon. And trout freshly caught in a mountain stream and cooked over a fire with strips of bacon nestled next to them.

I love Salmon, which is my favorite...a few months back discovered Copper River Salmon...and that is now my ultimate favorite fish. The season has past and now I must wait until next May!

Sardines. Whole sardines, not the canned kind. I like them lightly oiled, salted and grilled.
A new favorite of mine is wahoo, which I caught off of Roatan. The center-cut steaks, grilled with a light brushing of garlic butter, were a mind-altering experience. A quick breeder, I have no qualms about harvesting them for dinner, but it a strong arm to reel them in.
Being from Boston, scrod is a favorite. It's like ordering a mystery entree, you never know if you're getting cod or haddock.

Wild striped bass. And I think skate wing (skinned and boned) is highly underrated. But there really isn't a fin-fish I don't like.
