What to do...

I accidentally bought cottage cheese the other day and have no clue what to do with it, seeing as i also have an abundance of limes and chocolate wafer cookies i was thinking of making a chocolate/lime cheesecake. Does anyone have a good recipe for cottage cheesecake? (or any other suggestions as to what to do with cottage cheese, preferably dessert)

No question. It isn't dessert, but one of the tastiest mac and cheese recipes I've ever come across is made with cottage cheese. Blasphemy, you say? Don't knock it till you try it. I saw somebody make it on tv, so I copied the recipe and made it for dinner for my parents. I've been forced to make it on a regular basis ever since.

It calls for 2 cups cheddar, but I use 1 cheddar and 1 pepper jack, and I add Benton's bacon. I add Benton's to everything, though.

Please give it a shot. You will not be disappointed.

Like Ricotta, it works ok Dessert-wise if you serve it alongside roasted fruits like figs, with a drizzle of honey.

Its good blended into sauces, either mac and cheese like above, or a salad dressing blended with mayo and apple cider vinegar. I think I also saw a nice cottage cheese cake recipe on veggie venture.

I googled it, knowing there are some fabulous recipes for cottage cheesecake around! I see it as I do a cream cheese cake, it can be changed and added to so easily! Here's a link for one I rather liked...

Just chop up a peach, toss it with the cottage cheese, and drizzle with honey. I eat cottage cheese often; it's versatile and delicious.


Cottage cheese next to boiled new potatoes, sliced with some bacon and lots of pepper? Delicious delicious. The contrast between cold/hot is really priceless.

Cottage cheese pancakes!! They're AMAZING, here's a recipe:

6 eggs
1 1/2 C. cottage cheese
1/2 tsp. salt
1/2 C. flour

Directions

In bowl beat eggs then add other ingredients. If using blender or kitchen aid add ingredients in order. Don't over mix. Heat greased skillet & turn when each side browns. Don't worry too much about over or under cooking the pancake, you can tell when their done just like an average pancake. You'll see how great they will turn out every time!

Makes 9 pancakes
