What are your favorite omelet mix-ins?

This mixture of eggs & seasonings, cooked in butter, provides us with wide open possiblities for filling or topping options. Create savory or sweet ones, open or folded---served anytime of the day & can impress guests! My favorite mix-ins are mushrooms, brie, & asparagus. What are your best omelete mix-ins? Eaten any good ones at restaurants? What was your most unusual creation?

Spinach, scallion and feta cheese my all time fav. I also like mushroom and cheddar.

I make what I like to call "Meat-Lovers on Crack" omelettes. It's pretty much a combination of any kind of meat you can think of. My favorites are Sausage, bacon, hamburger, ham, and turkey bits. My dad likes his with Kilbasa added to his. Summer sausage is good, also. Anyway, if it's considered a meat, it's in there. Add cheese, some onion, and a little salt and pepper, and you're good to go!

Also: theres this stuff my parents used to make, and I don't remember what it's called. They make it whe Scrambled eggs, salsa, cheese, sausage and bacon, all wrapped in a soft-shell tortilla. I'll post again when I find out the name of it.

Spinach, red onion,baby peas, hot green pepper & cilantro , with salt & pepper , I like in my omlette.

I'm a bit of a bore when it comes to omelettes. I think adding too much often makes the whole affair a bit sloppy and flat. Having said that, I do love both:

Pesto & broccoli and
Cumin & sweet onions.

kcorder - I do love the idea of an omelette wrap.

Cheese (good cheddar) and onions. I guess I have pretty simple tastes.

mushrooms and good cheese and maybe if i'm craving meat some suprasatta(sp) i always precook the mushrooms and meat.

CHORIZO! That's what my concoction is called.

I made a rolled omelet this morning! It had chickpeas, tahini, hot sauce, and arugula. So delicious. I also love any omelet with onions in it, regardless of what else is in there.

Anyone add sweet ingredients? I've known jelly or caramelized apples to be added...

Cheddar cheese and either broccoli or mushrooms, but I must have cheese in my omelets!

Room-temperature cream cheese and minced fresh jalapeƱos or habaneros.

A place I used to go to in San Diego ruined me forever for anything other than their avocado, bacon, and pepper jack omelette. Uh, it ain't bad?
