Southwest specialties
For our road trip next month, we'd like to be food thrifty but also not miss out on the regional eats. Can anyone recommend places to eat that are inexpensive in our stopover cities: Omaha, Boulder, Santa Fe, Albuquerque, and the Flagstaff/GC area?

Dot's in Boulder makes great breakfast, especially huge, incredibly delicious, biscuits.
green chile stew and Navajo tacos in Santa Fe and Flagstaff/GC respectively. Get some sopapillas as well.

Manytowns in New Mexico have a fast-food hamburger place called Blake's Lotaburger. They have great green chile cheeseburgers for a very reasonable price. It can be great picnic food on the road.
