Quesadilla, what goes inside?
Finger-food, quick to make, can use whatever ingredients are on hand & then dip it in a sauce----meets & satisfies my hunger requirements! I prefer charred flour tortillas while fillings & cheese vary. A good combo for me is: black beans, salsa, avocado & Jack cheese, toasted then dipped in sour cream. How do you stuff a quesadilla?

fresh thinly sliced shallots, black beans, jack cheese, green onions, and thinly sliced skirt steak thats been grilled med-rare with a cumin and chili powder rub, all dipped in salsa and sour cream or guacamole... yummmm!

Lately I have been doing a pulled pork, guac, fresh salsa and roasted corn with cheese du jour.
In august I was doing a grilled pesto zuchinni with cheese du jour and roasted peppers.

I had a great quesadilla last weekend: stuffed with shrimp, arugula, garlic, almonds and queso. So tasty!

Dessert quesadillas sin queso:
banana slices and Nutella
thinly sliced apples and cajeta
Butter outerside of tortillas, slowly brown in butter over medium heat in a teflon-y pan.
To make a true quesadilla, I guess you could use cream cheese and fruit or cajeta.

I like a spicy good mix of beans and rice with as little cheese as possible. Must have a fresh avocado slice or two and some good salsa with it.

dessert quesadilla:
mini marshmellows and chocolate chips. If you included crushed graham crackers, it would be smorelike....

Lots of cheese, guacamole, diced tomatoes, green chile, sliced black olives and sour cream. Some of my friends add shredded chicken to theirs; or add ground beef and refried beans for a super hearty meal.

Bananas, raspberries, vanilla ice cream and chocolate sauce make a great desert quesadilla (more like a crepe I guess you would say but it still works!)
Other than that, I like me some cheese quesadillas with mole sauce.

Do you prefer corn or flour tortillas?
Do you order quesadillas in restaurants? I rarely do because they cool-off so fast that they usually are cold by the time I can eat mine :(

When I make it myself: Sliced fresh ham and salami, swiss, sharp cheddar and smoked provolone, a drizzle of salsa fresca and a spinkle of fresh herbs on a white flour tortilla. Fresh guac and more salsa fresca on the side. Yum! (Is it lunchtime yet?)
In the neighborhood cheap "healthy" Mexican joint, Gordito's in Seattle's Greenwood district, it'll be the grilled chicken quesadilla with its sour cream and guac on the side and the four house-made salsas to pick from on the salsa bar. Nice big cheesy wedges of fun.
