Pressure cookers....do you use one?

We just received a Fagor Duo 8-quart pressure cooker as a wedding present. I have never used a pressure cooker and I have only seen the old-school models in use - steaming, spitting, and rattling on the kitchen stove. But, I am excited to give this one a try. Do you use a pressure cooker? If so, what's your favorite thing to make with it??

RISOTTO! 20 minutes and it comes out perfectly and delicious every time. I make the following fool-proof risotto: saute 1/2 cup of onion with 1 tbsp of olive oil in pressure cooker. Add 2 cups arborio rice and mix with oil & onions for ~1 min. Add 1/2 cup white wine and mix until mostly absorbed. Add 4 cups of chicken broth (& some mushrooms if you like them) cover and bring to high in pressure cooker, then cook for 10 minutes. Release pressure quickly and stir in 1/2 cup Parmesan.

Also good for artichokes - cuts down cooking time to 15mins.

Great for stews as well.

At first I was skeptical (received it for a wedding present as well), but I've learned to love it (as has my husband who never believes in anything outside of traditional pots and pans) and many friends can attest to the delicious things I make with it. My recommendation is to buy a cookbook for pressure cookers.

They are used exstensivly in most other parts of the world. The French call them 'cocotte minut.' I love them for all the traditional long cooked stuff. But I do find that they make tomatoes taste tinny and canned.

I have two, both obsolete so when the gaskets finally go, they are headed to the trash bin.....what a shame!
If I am running short on time, I have a tendency to look at the pressure cooker or the pressure pan to see if I can bail my fat out of the fire. But I cook stuffed cabbage in the cooker, and I have been known to stuff a whole chicken in the smaller pressure pan when I run out of dog food. Also, for the human members of the family, I have pre-cooked a whole chicken for gumbo. When it is done, I just cool it a bit pull the skin out, cool the meat and cut it up, the juice goes in the frig to defat itself and then I can construct a pot of gumbo in a slightly shorter period of time.
There are good new cookbooks out, some with multiple meals that are cooked in one pot..... I love mine.

I looove my pressure cooker! I use it mostly to make soup stocks - you can get a pretty concentrated stock that will set when cooled without babysitting a simmering pot all afternoon. I also like to cook dried beans (no soaking required!) and even pot roast.

One of our favorite things to do in the pressure cooker is carrots - quarter lengthwise and cook them for three minutes at full pressure, then drain and sautee with just a small amount of brown sugar, butter and salt and pepper.

Half the fun is in the experimentation - enjoy!
