No Substitute

I recently found out you really can't substitute european basil for thai basil in a green curry. The same weekend I also found you can't substitute cumin seeds for caraway seeds in a czech goulas.
Which ingredients are vital for you? have you had any disasters where you tried to substitute something else?

They say you can make self-rising flour from all-purpose flour, salt and some baking powder. However, the quality of the ingredients you use can make a serious difference in what you make with the resulting self-rising flour. The biggest disaster I ever saw used some nice, fresh all-purpose flour, an old box of iodized salt and baking powder we had to look for to find. The handmade southern biscuits that came out of it were just not right! After that, it seems less irritating to make the drive to the 24-hour market and get real self-rising flour to start with.

I'm not quite sure about pureed peas, B ... after pureeing peas from scratch for four kids when they were infants, I'm sure I would have substituted something else! ;-)

Perhaps its because I have been spared that joy so far in my young life. Believe me, they were delicious and fun! I love to whiz things.

Ironically, the Czech word for caraway is "kmin," which occasionally gets mistranslated as "cumin."
Substituting dried herbs when fresh are called for usually yields disappointing results for me...

I've read that if you don't have Thai basil you can substitute by adding fresh European basil and mint. I've tried it and thought the results were ok.

Fish sauce....there isn't a substitute for that pungent liquid!
Ok, other than soaking dirty socks, week old fish and alligator guts in a stew of fermented tofu water.

My mother once taught me the most important baking lesson in the world. Never, ever, under any condition, substitute baking powder for baking soda, or vice versa. So, to this day, when I buy one, I buy the other, so that I never maket hat mistake!

I like to make cucumber salad a lot, which I usually make with white white vinegar. One time I was out and found a bottle of rice vinegar way in the back of a shelf and decided to try it. Definitely didn't taste the same and let's just say, I wouldn't recommend it.
