My 3 essential herbs & 3 essential spices are_____

Advice tell us to to buy small amts., smell & taste often throw out what's stale or flat. If you had to pick 3 herbs & 3 spices you couldn't cook without, what would you choose?

Herbs:
bay leaf
basil
cilantro

Spices:
cinnamon
vanilla bean
cloves

spices: (assuming the exclusion of salt and pepper) red pepper flakes, cumin, cinnamon

I'll assume that salt, pepper, onion and garlic are givens since everyone uses them in every dish that comes out of the kitchen; bar none!

What a recent recipe that was a particular success using one of you essential spices?

Rosemary

The essentials are based on dishes we wouldn't live without. Pho and a Bread Salad we love at our house. Thus:
Basil, Cilantro and Thyme (the thyme is just a key for so many things in my house)
Cinnamon, Clove, Star Anise (all three go in the pho broth).


I love growing my own basil and rosemary! And recently I improvised a nutmeg and coconut loaf cake for a friend's birthday. Yum!

Cinnamon is the spice I use most often but think the fragrance of cloves is the best smell in the world.

in answer to your question, jep, i get my stuff at the penzey's at grand central market or at kalustyan's.

herbs-thyme, basil, oregano (the only way to go is fresh for basil, the others, I do a mix of fresh and dried depending on the recipe)
spices-cumin, red pepper flake, cinnamon (I too am assuming that garlic is a given, since I don't think I make anything without it!)

What's your least favorite herb or spice? What experience led you to its dislike?
