Mmmm...bar cookies

Mix-up, spread in a pan, bake...less time consuming than rolled or shaped cookies. The hardest part is waiting long enough for them to cool before cutting into squares & taking that first bite! A few of my favorites are: brownies (of course!), lemon squares, fig bars, the original Hello Dolly & Rice Krispie treats. What bar cookies do you bake? Any tips on keeping bar cookies soft?

Oh god raspberry streusel bars, SWOON, I could eat them all the day long which is why I only make them once a year.

My favorite bar cookie is these from Maida Heatter.

lemons---I thought for sure you'd say Lemon Bars :)

My aunt makes Magic Bars which have nuts, coconut, chocolate, graham crackers, etc. all jumbled up into a really sweet/salty treat.

Jerzee -- I love raspberry bars too -- I trick myself into thinking that they're healthy...'cuz they have raspberries in them, right?

YES magic bars! Are they the same as Hello Dolly bars? They are my hands down favorite. I think my mom has made them every year at Christmastime since the 80s, judging by the looks of the recipe.

I make raspberry bars, lemon bars, brownies, blondies and pecan bars. Where can I get a recipe for Magic bars? They sound amazing.

Peanut Butter Fudge bars!

Bar cookies lend themselves to countless improvisions---what have been some of your successes or failures? Do you thick & gooey or thin & crisp? Dense like fudge or crumbly & soft like cake? Iced or sprinkled with pwd sugar? Nuts on top?

JEP - I like making this one recipe that has a melted chocolate/sweetened condensed milk layer over the crust. It comes out like fudge on a cookie, which cuts up really well and is really satisfying in small bites. It makes it a good cookie to put in tins and give away. I love cookies!

Nanaimo bars. The plain old normal kind. They're delicious.

This recipe for graham cracker bar cookies always tempts me to no end....
