There is PLENTY of good Chinese food in LA. Go directly to Monterey Park. I'm not sure exactly what you're looking for, but the dim sum's cheap and good. I like Empress Harbor (111 N Atlantic Blvd Ste 350) and Ocean Star (145 N Atlantic Blvd). I have no idea about their dinners but the seafood tanks are not full of dead fish. And I like the Sam Woo chain for lunch stuff.

Mark Bittman put together a handy list a while back that's probably a good place to start.
