Burned my Butt....roast!
I have an expensive roast in my deep freeze that has some freezer burn. Before I throw it out I was wondering if I could use it the next time I make beef stock? Would it be safe? Would it affect the taste?Thanks in advance for any advice.

According to them, it wouldn't affect the safety of the meat, although it may lend an off taste/texture to it. I wonder if you could cut off the freezer-burned portion and then use it in stock...

If your going to smoke your butt you will never notice it being off. If you are going to stew it you won't notice it. If you were going to roast it you might notice it. When it doubt go with lots of garlic. If it were my roast I would stew it or roast it with tons of garlic, salt, pepper and serve with a horseradish sauce so its somewhat masked.
Buy freezer paper. Freezer paper really protects your food.
