Beet It

I just bought some raw beets. I am going to cook them ,and throw them into a goat cheese salad with chicken and cilantro with a balsamic vinaigrette. I love beets, and I wish I knew more ways to use them. Any suggestions?

The only changes I make to the recipe are as follows: I roast the beets at 375 for 50 minutes wrapped tightly in foil, let them steam for 20 or so minutes in the foil, and then just peel them with my fingers and slice them. I also use honey instead of sugar.

I might also suggest tripling or quadrupling the batch...I have been known to eat them straight from the fridge. With my fingers.

I love beets as well, but my father (thinks he) hates them, so I don't really get the chance to have them very often when I'm home from school over the summer. When I'm cooking for myself, however, I like to make salad of roasted or steamed beets, pecorino romano (or any other tangy, salty cheese), and arugula with a lemon vinaigrette (or I skip the arugula, and pile the beets, cheese, and a bit of dressing on slices of good bread).

Roasted beets in a goat cheese salad with walnuts, avocado, and balsamic vinaigrette is one of my favorite ways to eat these gems, so you're right up my street!
Also, Mark Bittman's Quick Pickled Beets is fast, fun, and provides old-fashioned flavor.

One of the most astonishing beetroot dishes I've made is the pureed beetroot and walnut salad from Madhur Jaffrey's World Vegetarian cookbook. It involves, if I remember correctly, cooked beetroot, walnuts, stale white bread, olive oil and red wine vinegar, puree then season to taste. I made it for my book club and served it with warm Turkish pide, and every person there asked for the recipe. It's tangy, moreish and bright pink, and makes a nice change from the endless procession of beetroot/goat cheese salads which, though lovely, can seem a bit tired after a while.

Another great beetroot dish that I've eaten but not yet tried to make is a South Indian (Kerelan) beetroot curry with yogurt. There's a restaurant near me in London (Rasa, Stoke Newington) that serves this dish, and it's one of the most delicious things I've ever eaten, definitely worth attempting at home.

I also crave borscht in the autumn. I make a vegetarian version with lots of vegetables and butter beans, finished with a splash of red wine vinegar.

Try pickling them. My wife followed Alton Brown's recipe and it is great.

I make a carrot-beet salad with raw grated carrots and beets, ginger, lemon juice, and salt.

as an aside, i have tried beets over and over again, and no matter what, i find them repulsive. it seems to me that this is common--people seem to love them or hate them, but no one seems to be in the middle where beets are concerned. which is my long-winded way of saying, please don't serve them to company!

What about cinnamon beet rolls? Heh, bet you didn't see a dessert idea coming!
