Bacon--thick or thin?
Am I the only one who likes thin-cut bacon? Thicker bacon just gets tough, instead of crisp (how I like it)

I also like thin cut as a side with eggs, or pancakes. But when I make baked beans, or quiche, or am using it as an ingredient in anything, I use thick cut.

If you cook thick-cut bacon very slowly, it will crisp up much better. But to tell the truth, the crispest thick-cut bacon is deep-fried. (Yes, there are places that do that.)

I like bacon any old way, thick or thin. I bake it in a 400* oven while I'm working on the home fries and the eggs . . . lay it on a rack on a roasting pan, it comes out crispy every time.

I use a bacon wave for the best bacon thick or thin. It uses the microwave and that is the best use of that appliance other than reheating or warming food.

Thin for wrapping. Thick to eat on its own or to cube for mixing into other dishes.

The best would be to own one of those super duper awesome deli slicers and slice your own. Buy your bacon by the slab and cut it the way you want it for a particular application. You can do it without a slicer too, but you wont get those paper thin cuts that are so great.
There is a smoke house up by where my parents have a house in upstate NY, the Smokehouse of the Catskills, they make a double smoked bacon you can buy by the slab, and it's so good and so clean you can eat it raw. I've often wished I could slice it as thin as prosciutto and serve it with figs, cheeses and cantaloupe.
Something like this would do... *Sighs* we can always dream right?
