What is your favorite fall vegetable?

This is the onset of my favorite time of year -- fall! I have thoughts of brussel sprouts (Ina Garten's roasted brussel sprouts recipe is killer) and about a 100 varieties of winter squash!

Daytime highs in the 70's, nightime highs in the 50's. Just got back Vegas and the temp was 105! For a northener from the Great Lake State, that was a bit extreme for me!

The old saying, "If you're going to stand in the kitchen, you need to be able to stand the heat." bears up well here 'cus I know it's coming. I can't wait for cauliflower season! Love to steam the flowerettes and bathe them in any number of varieties of cheese sauce. Eat the flowers raw from a veggie tray. Serve with a dip. Mix them into a tossed green salad. Not bad pickled either.
Best of all; steam larger cuts of flowerettes, cool slightly, dredge in flour, dip in egg wash, redredge in bread crumbs and deep fry. Serve with tartar sauce, boiled potatoes and a green salad. Almost good enough to get me to convert to vegetarianism. Almost.

Butternut squash

I am not a fall vegetable kind of fella, but man, I love spaghetti squash.

Butternut! Also, kale, but I love that year-round in all its phases - from tiny baby salad leaves to the leathery long-cooking giants I get just before the first frost.

I second the roasted brussels sprouts. They are ethereal.

wow! I didn't think so many other people would love butternut squash the way I do! I love to roast it with garlic and coriander and cumin seeds.

For you butternut squash fans--have you ever tried Giada's recipe for Buttnerut Squash Lasagna? Sooo good.

Collard greens with a good, smokey ham hock

Squash seems to be the favorite here, and I like squash too, but just to mix it up, I'll go with broccoli and cauliflower.
