What do you do with your ground meat?
Meat loaf? SOS? Meatballs? Pot stickers? Ravioli? Sloppy Joes? Fresh ground sausage patties and eggs on toast? Loose meat sammies? I grind my own meat btw...that sounds a lil' naughty but you know what I mean. I save buck$ by grinding my own pork, beef, chicken etc. At heart, I'm a cheapskate...but I'm full ON gourmet when it comes to cooking. I'd love some recipes from you hard-core foodies regarding ground meat.

What don't I do with my ground meat should be the question. While we eat mostly chicken and fish, ground meat is always available and you can use it one in a million different ways...

Meatloaf, usually half beef, the rest pork and veal (I love it cold the next day),hamburgers (beef or ground lamb), meatballs with garlic and parsley and cheese...oh my! What are sammies? Is this a regional food?

I love pasta with meat sauce! Saute some ground beef and pour in the sauce... so easy!
Meatloaf, meatballs, hamburger patties...those are all good too :)

Equal parts ground lamb and beef with garlic, onions, parsley, coriander, cumin, formed around a skewers for kefta kebobs. Topped with sauteed sumac onions and a squeeze of lemon.

Aww you guys have great ideas! Okay, I forgot to share something...yup...how to cook meatballs...I wish I could remember the particular episode on 'Food Channel' but this adorable, little old Italian lady INSISTED that you cook your meatballs right in the sauce (No pre-browing)... So, sure enough...I tried her method and my meatballs were so sooo sooooooo tender and delish! I'll NEVER pre-fry my meatballs every again...they are MAGIC stewed in the 'mater' sauce. :D

Cheffy, I am always concerned that the meatballs will not have that browned, "cooked" look if they're just put in the sauce. Thus, I've baked them, browned them, and almost fried them in advance. I've never been completely satisfied... Did you use any egg or bread crumbs in the meatballs?

I found the secret to making White Castle or Krystal like sliders is to chop up and make a bed of onions then you put the hamburger pattie on the bed of onions and let it cook and steam. . White Castle doesn't turn the burgers.
I saw on Food Channel Easy Entertaining what I think makes the best meatballs I ever ate. You bake the meatballs in the oven in a pan with enough water that just the bottom of the meatball is covered in water. Cover the pan with foil. Bake for about 30 - 35 minutes at 375 degrees.
I make my meatballs with onions, breadcrumbs, egg, parsley, garlic powder,, parmesan cheese, salt, pepper and hint of fennel. I roll the meatballs in olive oil and breadcrumbs before sticking them in the pan.
I make Runza sometimes. Beef, onions, cabbage, salt and pepper all cooked in a pan.. You can wrap it in dough and bake or just put it on a bun. Adding cheese is good.
