What do you do with an avocado?

Most often I add slices to sandwiches or leafy green salads, occasionally make guacamole. But I have been known to just cut open, remove seed & eat this creamy fruit with a spoon. I've read people even make avocado ice cream & drinks. Share your uses for avocados & recipes!

First instinct is to make guacamole; second, avocado wedges sprinkled with lemon juice and salt.

Put on oatnut bread with tomato, cheddar, and WV Hot Pepper Butter.

I saw avocado ice cream on Desert Candy's food blog! It looked pretty good actually! Avocadoes are amazinnng in salads, like you already do. Avocadoes are also really good in sushi or served up alongside some seared Ahi tuna! Mmm....

Otherwise, I recently made a green pie with avocados.

Avocado, milk and honey is great before a workout--just blend it up. I also like to make a tofu and avocado salad with a fish sauce based dressing. This is great tucked into lettuce leaves. And, of course, avocado out of hand with salt, lemon and a spoon.

Sliced avocado, stacked in a mold with crab meat, topped with microgreens and a colorful sauce/dressing from a squirt bottle, and you've got an instant crowd pleaser.

One of the ways my family enjoys avacados are on bacon, lettuce and tomato sandwiches. Other than that I love them with sea salt, cracked black pepper and a little fresh lime.

2 regular cukes (peeled and seeded), 1 large ripe avocado, a cup of buttermilk, a half a cup of broth, a hefty amount of dried cumin, some ice cubes: mince one cuke half and chop the rest coarsely, then put all except the minced cuke into the blender. Soup! Garnish with minced cuke and some more cumin. This is my go-to in the summertime. So creamy!!

A good avocado is a treasure and in season.....cut it in half, get out the cayenne pepper and some really plain corny crisp tortilla chips and a spoon and go at it. Cayenne sprinkled on the half and then just a bite of avocado, chip, avocado, chip and sooner than you wish it to happen........done. DH of course gets the other half, seeds go to the greenhouse in a bucket and grow like mad. I have one now that is 7 years old and I am expecting an avocado next year....or else.
I have nothing against any of the other methods, they are all worthy, especially on BLTs

Thanks for all of the ideas & recipes. I had not thought of a cold soup. I love the richness of a perfectly ripe avocado. I remember in elementary school trying to sprout & grow an avocado tree----the seed (with toothpicks in the sides) dangling in a glass of water. Soon, my mother got weary of seeing & smelling this science project & tossed it!

Avocado, swiss, romaine sandwich.

A couple weeks ago I made a great salad with romaine, cucumbers and avocados with a homemade green goddess dressing (recipe from Sunday Suppers at Lucques) that was DELICIOUS! I had never had green goddess dressing before then, but its tangy, herb-filled, super fresh flavor was perfect with the crunchy veggies and creamy avocado! YUM!
I also adore making and devouring homemade guacamole!

I love making guacamole or just spreading mashed avocado on toast. After reading this I want to make avocado ice cream... that sounds great!
