ive never seen rb's used in any really creative fashion.. side dish, mexican filling, nacho topping.. looking forward to hearing what people suggest. about the most creative i get is using a piping bag when applying cold to the top of pre-cooked nachos

I've been using four or five of them as weights to hold down my lightstand in my little photo studio.
(Seriously, I just warm up a can sometimes with a little extra water and use it as a bean dip with corn chips.)

I've added them to chili - it thickens it up nicely.

They make a great filling for little Filo triangles.

Mix in some salsa, top with a good layer of grated cheese, throw in the microwave to make a dip. Excellent for potlucks, esp. if you can heat it when you get there.
Alternatively: quesadillas, tostadas, and the like.

you can make bean "burgers"...just mix with some bread crumbs, chipotles, cilantro, little lime juice...fry in a pan, top with a fried egg...great dinner

you can make a nice bean soup with them (I'm thinking smoky, pork bean soup), or mix them with greek yoghurt for a great dip.
I also make a tex-mex 'pizza' where I spread refried beans on tortillas as a base, top with veggies and meat, grated cheese, bake and serve topped with salsa and sour cream.
oooh! you could also make tex-mex fusiony crostinis! refried beans, lime juice, cilantro, fresh tomato, parmesan... refried beans, parma ham, avocado...

I love 'lightly' fried bean burritos. I buy some flour tortillas (or make 'em from scratch if I have the time and wherewithal) and wrap up some bean and cheese and fry in shallow canola oil...top with a lil' bit of salsa [homemade or store bought] and top with some good sour cream (Tillamook light sour cream is my favorite and it has active cultures in it just like yogurt so it's easier to digest).
My daughter love's refried beans mixed with a bit of cilantro, oregano, chicken stock and butter, salt and sour cream...when she was a tiny tot I'd tell her it was 'Bean puddin' :))

I've used Plain Vegetarian Refried Beans as a meat alternative for Ravioli, Gyoza/potstickers & Pirogies. Whenever I have a party, I find that dumplings make a good appetizer. Using refried beans offers a vegetarian &/or healthy alternative to traditional meat or cheese fillings.
One note of caution, the beans must be the stiffer or drier variety or the dumplings won't hold up.
