Oh dear...Low Carb recipes?
I cringe as I write this, but I'm trusting my fellow serious eaters to come up with something more creative than deli meat wrapped around a piece of cheese.
And just to preempt the type of response I would normally give to this topic ("It's not healthy to exclude any one food group, just eat it in moderation") this is an early intervention for me, so I don't end up sticking myself with insulin in a few years. So with that, let's hear your inventive salads, filling meat meals, etc. Thanks!

Buffalo wings with celery and blue cheese dip.
Steak with compound butter.
Creamed spinach.
Whipped cauliflower with garlic, topped with butter (a remarkable substitute for mashed potatoes).
Frico (crispy fried cheese disks).
Deviled eggs.

Good for you! A low carb diet can be VERY hard to stick to but it helped me lose my pregnancy weight when NOTHING else would.
If you like fish, pan seared salmon, swordfish (swordfish can be spendy but it's sooo worth it), Ahi tuna steaks are excellent and very heart-healthy (just don't over-cook them). If you like chicken, my chicken salad is great on a bed of lettuce (or on toasted, whole wheat bread if you can splurge occasionally with some 'good carbs'). Shrimp is low-fat and low carb and you can make your own coctail sauce with Splenda, tomato sauce and vinegar and a bit of good olive oil, diced pickles and a small amount of diced onion.
Here's my chicken/apple salad recipe:
Some diced pan seared chicken (or canned chicken if you're in a pinch)
Diced celery
Diced sweet onion (or scallions if your sweets are out of season)
Diced red peppers
Diced Pink lady apple (or any firm-sweet-slightly tart apple)
Light Mayo
Light sour cream
Dijon mustard
Fresh cracked pepper (omit if you hate pepper, of course)
A squeeze of fresh lemon juice or lime juice
The above recipe can be played around with to your heart's content...I usually never write down exact amounts since I like to play with ingredients (drives my hubby bonkers when I don't write down exact amounts). Olives would be good...grated sharp cheddar...etc.
Crab salad is really good too...just beware of some of that fake crab...some are much better (and lower carb) than others. You can toss in light mayo, sliced olives, grated cheddar, light sour cream, fresh lemon juice, grated carrots, chopped green pepper etc. and serve that on a bed of lettuce too.
And of course, good ol' tuna salad is great as well! :)
Oh! And a great 'fish' topper for your grilled/seared fish of choice is my Lime & dill tartar sauce:
Light mayo
Light sour cream
Fresh or dry dill (to taste)
2 limes juiced w/ zest Sugar OR Splenda (to taste)
Kosher salt
Diced sweet onion (adds a nice crunch and flavor)
Green Tobasco sauce (to taste)
If you don't like Green Tobasco sauce (*gulp*) you can substitute horseradish...or keep it without either but I like a bit of a 'kick' and the green tobasco really makes that sauce stand up and sing.
Then...just mix and serve next to or on top of your fishies! =0)

Oh goodness...I started thinking up more low carb recipes for you. lol :)
How about oven roasted green peppers stuffed with sausage and diced veges (carrots, onions, zucchini) perhaps topped with marinara sauce and mozza cheese?
How about some lengthwise sliced zucchini coated with a bit of kosher salt, oregano, basil and olive oil and oven roasted and then served with a cucumber dip?
Also, a good low-carb comfort food is 'Cabbage Patch' soup...tons of sliced cabbage cooked with tomato sauce, canned diced tomatoes, basil, Hungarian paprika, oregano, fresh ground pepper, roasted garlic, beef stock, a dash or two of Worcestershire sauce, cubed roast beef, diced red or green (or both) bell peppers, diced carrot & diced celery, diced sweet onion, fresh parsley leaves, frozen or fresh sliced green beans...then stew for a few hours on low heat and then mix in some light sour cream (be sure to temper the sour cream before adding to the entire pot) and serve with some parmesan cheese grated on top and a few chives for garnish.
-Another tasty low carb treat I still love to this day are my pickled eggs. You just hard boil some eggs and refrigerate them in a glass jar with a typical pickle brine solution for a few days...very tasty and a low carb quick, high protein snack. :D

try ethnic foods. stir fries, curries, served alongside steamed/sauteed broccoli or spinach, or on top of vegetable steaks like grilled eggplant, or on top of a chicken breast or fish filet. learn to love vegetables!

sorry i must ask when your doing the low carb chicken salad recipe why the Light Mayo/Light sour cream not the full on real deal? plus apples and onion have plenty of carbs... please explain

Uhm...let's remember we are talking "low carb" and not "NO carbs" eh?
Light mayo and sour cream etc. is just what I always use because I actually think the flavor is better than the full-fat dealio...again...feel free to play with ingredients and not get locked down on my own concepts...I love free will when it comes to recipes...but I actually found I don't 'phlegm-out' when using light mayo....something that is a big PLUS in my book. :)
Yes, apples and sweet onions have carbs but they are 'GOOD carbs'...if you are on a low carb diet long enough the taste of sweet onions and apples are so intense it's like manna from heaven. Going 'carb-off' cold turkey is harsh...I don't recommend it unless you have time to sleep a lot and crash a lot because of the low blood-sugar.
Good fats and good carbs keep my skin fresh as a daisy: ie: ...fish...olive oil...avocadoes...sardines...oysters...(you get the idea).
Hey, we won't live forever and tomorrow I could die from something as annoying and insignificant as a fender-bender...and if my last meal is some lousy salad I'm gonna be mighty peeved in heaven. ;p
If you're on a low carb diet...don't be to strict or hard on yourself...you'll be amazed how you'll taste foods differently...even green bell peppers will taste like candy...

Another low-carb idea for you (help me, I can't stop lol)!
How about a crustless quiche? Maybe mix one layer with some ricotta, egg, salt, a lil' bit of parsley and Parmesan, then add a layer of some cooked sausage or ham or bacon with some sautéed veges like red peppers, onions, zucchini, mushrooms etc. and perhaps a thin layer of baby spinach...then top with an egg mixture of just eggs, salt, and a wee bit of milk...bake for a bit on low temp (around 325 degrees) and once it starts to set top it with one of your favorite cheeses (sharp cheddar, goat cheese, mozza...whatever you like). Then turn the oven off and let the cheese melt and the residual cooking should set that concoction up nicely...wait until it's acclimated and then slice and serve! Voila. :)

I have several recipes that I've actually TRIED and we love. I try to take pictures of them as well. REAL people pictures, not those that are "styled" LOL! I'll post a few recipes I've tried during my first week of low-carbing it, incase anyone else is interested:
- stuffed mushroom caps (crab meat, parmesan cheese, fresh herbs, and mayo to bind although I think I'll sub cream cheese next time)
- salmon patties (canned salmon, or fresh I suppose, fresh herbs, a little onion and an egg to bind, lightly pan fried)
