Mussels for beginners?

I want to try making mussels - but I don't want to give myself food poisoning. What do I need to do to make sure I weed out the bad ones?

Also, how many mussels should I buy to make a main for two people?

Two pounds should do for two people. Be sure to buy from a reputable source and then don't eat any that haven't opened after you cook them. When in doubt about a mussel, don't eat it.

Throw away any that are open before you start cooking them and throw away any that are closed when you're done cooking them.

if they are open before cooking - tap on the shell. If the mussel is alive, it will move, or shut - then its ok to cook. But like cb said - don't eat any that are closed when you finish cooking them.

How are you going to make them? cocunut lemongrass curry? white wine and cream? tomato and garlic sauce?

oh man, i love mussels.

mmmmmmmmmmmm mussels, probably one of the easiest and tastiest meals on the planet. Give em a good wash/scrub for dirt and follow the suggestions above and you'll be just fine. I would however be sure not to cook them too long because your afraid of them ending up raw because they'll end up like a rugged set of goodyear's.

I totally agree with all of the above advice. I always think the simplest recipes are best. Let us know how they came out.

You guys are the best. Thanks for all the tips. I am planning on tomato and garlic based sauce.

I probably won't make them until Saturday, because I'll have time to go to the good fish place then, but for sure I will let you know how things go.

Just some white wine and garlic and olive oil / butter is the best, with a good crusty bread to sop up the juices...

Don't forget the bread!

I have had thai type mussels that were cooked in a white wine type sauce with lemongrass, chilis, and basil. Good eats.
