Homemade bagel recipe....

I love bagel sandwiches and thought it would be pretty cool to make my very own homemade bagels.

I've had very good luck with the bagel recipe from Bittman's "How to Cook Everything". Just remember to use a strong bread flour. I also prefer to proof the dough in the fridge overnight, then allow it to come back to room temp before baking the next day.

Sigh. My mother has a theory--that "bagel sandwiches" ruined the modern bagel. A bagel is not a bread that's meant to be easily bitten--it's more of a teething ring than a bread. Places like Bagel Nosh changed the model for bagels, and they've never been the same since. So, if you find a good recipe for homemade bagels, the odds are that they will NOT be appropriate for sandwixches.

That's very true. I tried using mine for a sandwich, and about half the filling got squeezed out. I find that my homemade bagels are best when simply halved, toasted and topped with cream cheese, butter, jam, etc.

It's not hard to do. Try the recipe in Peter Reinhard's "The Bread Baker's Apprentice." I've been told by native born New Yorkers that they are better than what they get in NY.

That looks like a good recipe, BakingAndBooks! They include the malt syrup and the boiling. The only really decent bagel I ever got here in NYC was at the now-defunct Columbia Bagels, on 110th and B'way, but Absolute Bagels, down B'way a couple of blocks, comes close. They use malt, which is crucial in the process.

Rose Levy Beranbaum has a good recipe in The Bread Bible. It's a more "traditional" than "commercial" bagel, but I've managed to use them for sandwiches :-)

Also, look up recipes for "montreal style" bagels -- they're different than NY style and are worth a try.

Thank you guys for your suggestions. I made my way over to Bakingandbooks and tried the poppyseed bagel recipe. My homemade bagel worked out to a fabulous sandwich! Needless to say, my lunch was extremely satisfying and wonderful! My bagel didn't even fall apart..it cut easily into two halves, what more can I ask for? Okay, I'll stop drooling.

By the way, on my recipe mission I noticed bakingandbooks has a cookbook raffle taking place. Of course, I entered just in case I can pick up a new book with maybe another recipe. Wish me luck!
