First, I borrowed a panini maker.
Peach Melba Panini
Spread thick layer of marscapone cheese on one slice of walnut bread
Spread raspberry preserves on other slice of walnut bread
layer on thinly sliced fresh peaches
lightly butter outside bread slices
toast in panini maker until oozing goodness
Consume!

Ooh! I love gourmet sandwiches, so I'll be watching this thread closely!
My favorite is a toasted ciabatta (or anything, but white and crusty), with garlic aioli (garlic and mayo if you don't have it), raisins, chicken (I love yves veggie chicken strips on this), brie, and thin apples. Toss 'er in the toastes oven for a quick toast and dig in.

Okay, I'll go "Chicago style" with my meatball-no-holds-barred- sammich. Yeah...it's a heart-attack in the making but worth it. ;)
I use one of those electric sammich makers but you could prolly get by with two really hot, cast iron pans (one to cook the bottom and one to press the top whilst cookin').
Anyhoo,
All ya do is add some a couple meatballs plus sauce per sandwich with a slice of provolone cheese and grill that sucker golden and bubbly. I like to preheat my meatballs in a saucepan to be sure they'll be fully cooked.

That sandwich sounds absolutely terrific! You could grill almost any sandwich and I'd drool, though :-)
In fact a favorite of mine is to make a grilled cheese with fresh mozzarella and good pepperoni on some homemade semolina bread that has been brushed with extra virgin olive oil. Crunchy, salty, gooey, yum...I'm hungry :-)

I forgot! A nice summer sammich is to just get some very pedestrian, gooshy, squishy (not so good for ya) white bread..., butter the inner sides very thinly, then layer on some thin slices of cucumber and lightly sprinkle with kosher salt. I like to cut off the crust and make it all 'purdy' like but each to their own. I love me some cucumber sammies! *MUAH*! :)

Hummus and roasted eggplant/zucchini/peppers!
Tuna (packed in oil) with cheddar cheese, slices of red pepper and cucumber, mayo and mustard spread on a baguette.
Turkey/stuffing/cranberry sauce/and leftover salad sandwiches!
Tomato, mozzarella, lots of basil, olive and oil and balsamic on bread that's crusty enough to stand up to the juices, but not so thick that you're eating mostly bread.

this weekend i had a delicious italian roll filled with proscuitto, cream cheese, and sliced tomato. delicious
i've also been enjoying pickles and mustard on my sandwiches. one good setup has been: turkey pastrami, sharp provolone, hot&sweet honey mustard, and half-sour pickle spears (gabilas are wonderful).

I've been making my boyfriend sandwiches for lunch a lot recently, and he's been digging corned beef, turkey and cheddar with avocado on jalapeno cheddar bread, and also roast beef, ham and swiss with tomato on cottage dill bread. Farmer's markets make sure you make good sandwiches in the summer....all sorts of fresh breads and vegetables yum!

I make a enormous ice cream sandwhiche for my friends children. Making a big batch of cookie doing I'll press it into a round pan (the pizza ones), making two of course! Then I'll make up a batch of ice cream (usually chocolate) and sandwhiche it inbetween the two big cookies. Adults and kids love it!

my summertime sandwich:
2 slices of nutty german brand Feldkamp either Fitness or Sunflower bread
cottage cheese
thinly sliced crispy cucumbers
or sometimes I make it open-faced.

Lilartist, the huge ice cream sandwich is brilliant! i always loved those huge cookie cakes growing up. do you cut it into slices?

Yes, you cut it up into "pie" shapes when it comes to eating it. It can be really tricky...it easily get's messy. A very sharp knife is important.

The best sandwich I think I've ever made was on focaccia. I grilled thin slices of zucchini, put them on with tomatoes, roasted red peppers, marinated eggplant, provolone and fresh basil. Also made a basil vinaigrette to put on the bread then closed up the sandwich and grilled it between my cast iron pans.
Took them on a picnic to watch some fireworks, damn those were good.

Not quite a sandwich, but the past few days, for breakfast, I have been toasting challah and eating it with a dollop of ricotta and a drizzle of honey - perfect.

in line with the above ice cream suggestion.. toast two frozen waffles, and put a scoop or two of neapolitan ice cream in the middle. squeeze until ice cream spreads out to the edges and CHOW DOWN.

I definitely wouldn't peg it as my greatest, but it's definitely my latest:
Spread almond butter on half a slice of whole wheat matzo and ginger orange marmalade on the other. Fold in half. Munch away knowing you're eating healthy and will be filled until the next meal.

I like to recreate some of the sandwiches I used to be able to get at the sandwich place near my college (Big G's in Winslow, ME). I've gotten my boyfriend hooked on the Seapig:
On a wrap or lavash melt swiss cheese. Then spread with seafood salad (blitz Krab in a food processor until pulverized and add just enough mayo to make spreadable) and top with crispy bacon! Roll up and eat. Yum! I also like to add fresh tomato to mine.
