Banana Overload!

Put simply, I love bananas. Because they tend to ripen quickly in my warm, warm kitchen, every weekend I end up with 2 or 3 bananas that are too ripe to eat. Any good banana recipes out there, particularly those calling for very ripe bananas? I'm already up to my eyeballs in banana bread! We've also had our share of banana pancakes.

I also use bananas in the custard for boston cream pie (OMG soooo good)

I make banana waffles. Bananas and rum make a great change off in a tiramisu. I also change off with strawberries/bananas/chamboard bananaberrysu.

A friend of mine makes really good banana chocolate chip bar cookies (really soft and chewy, sweeter than banana bread). I've never asked for the recipe, but I just googled it, and a bunch of baking sites with recipes came up. I might try a few myself, come to think of it...

-Banana fritters- so easy to make. Just make a batter like you would with tempura. You can also buy pre-mixed flour for tempura in asian stores.

-Sweet banana soup with tapioca balls.
-Banana ice cream.

Why don't you put the bananas in the fridge? I do in the hot weather when they just got ripe. The skin will turn brown on the outside over a few days, but the inside is perfectly fine. You'll get to eat chilled bananas too. Just put them in plastic bags to prevent being too cold.

Make banana bread pudding- it's easy. Take a basic bread pudding recipe, saute the bananas in butter, til soft, not falling apart. Add the bananas,maybe some coconut and nuts of your choice to the bread pudding mixture. Or if you'd prefer, add some chocolate chips.

Freeze & then add to smoothies.

I keep my bananas in the fridge in the summer too. You can peel the bananas and freeze them to cook with later also. Or you could buy 2 or 3 less bananas?

Thank you all sooo much. I'll look through these today. I have so many bananas because I buy in bulk--the quality is much better than anything I can get in a grocery store in New Orleans. And my fridge is already PACKED with bread, bagels, and a lot of other fruits and veggies, so I allow the bananas to ripen with the expectation I'll turn them into some yummy baked good on the weekend. Wonderful suggestions!

If you have any left just toss them in the freezer. They'll only be good for baking, but it's better than throwing them out.
Oh! One more here; cut them in half, dip them in chocolate, maybe roll them in something, like nuts, marskmallows, or smarties, and freeze them in plastic wrap instant banana chocolate popsicle

My favorite: Spread nutella on them, wrap plastic wrap and freeze.

i like to cut them up and stick them in the freezer. When I'm in the mood for icecream I eat the banana slices with a little cinnamon sugar sprinkled on top.

2 frozen bananas, a teaspoon of sugar, maybe a bit of vanilla, 75ml of buttermilk. Blitz. Instant banana icecream.

The other thing to know about putting bananas in the fridge is that it keeps them at whatever stage of ripeness they are at that point, even though the skin goes dark.

Yeah, I would love to put them in the fridge, but it's FULL with bread and other, more fragile fruits and vegetables that ripen more quickly than bananas. I also have a pretty good stash of bananas and berries in the freezer.
