Vegetable terrine recipe?

Does anyone have a nice summer vegetable terrine recipe that could be served at a picnic?

Ok Grubgirl:
Grilled vegetables (Eggplant, Zucchini, Red Onions, Peppers) Mix Goat Cheese with softened cream cheese with some herbs de provence and spread it in between layers of the grilled vegetables. Serve drizzled with a balsamic vinegar reduction.

This isn't exactly a terrine - but its delicious!
In Montreal I learned to make "vege-pate" - a mix of veggies, nuts, nutritional yeast, a few herbs. It sounds a bit strange, but its so amazing!
