For me it's panzanellas, heirloom salads, cold cucumber vinegar salads, composed salads, chopped salads..... an, I see a cool trend here :)

Cold sesame noodles with plenty of cilantro, crunchy bean sprouts and cucumbers.

ICE CREAM! Hell yeah.

Low-fat frozen yogurt and fresh fruit--all day long. Mozz and tomatoes. My office is the only room in the house without a/c, so I really suffer. For dinner, simple but not necessarily cold, which can become tiresome. Last night was seared duck breast with sour cherries.

Limeade and seltzer with frozen grapes in lieu of ice cubes, watermelon salad with feta.

I'm much more attracted than usual to fruits and vegetables, and have already lost about a few pounds in the past week.

Berries, nectarines, peaches; greek yogurt; lots of green salads; ice cream is always a good snack. Vegetables on the grill; just because it's hot doesn't mean I won't eat a good steak. Dinner tends to be quite late, about 8:30 pm or so, once it has started to cool.

In addition to many of the usual salads and beverages mentioned already, I love eating spicy food (esp Indian) when it's hot out...makes you sweat, which in turn, cools you off!

Blue Bell Ice Cream, especially Cookies and Cream.

Frozen grapes; black seedless is my preference.

Ice cold watermelon with mint. And salt & pepper if I'm at home, but the salt lets too much water out of the melon if I'm taking it to work. I'm snacking on some right now!

I love a cold Polish soup called:

Choldnik

3 cups well-shaken chilled buttermilk
1/2 cup sour cream or crème fraîche
1/2 teaspoon salt
1 cup chopped bottled pickled beets,
plus 1/4 cup pickled beet liquid
1 cup peeled, chopped, and seeded cucumber
2 tablespoons chopped fresh dill

Whisk together buttermilk, sour cream, and salt in a bowl, then stir in the remaining ingredients. Chill at least 15 minutes before serving.

Yield: 4 first-course servings

Fresh, chilled peaches, cherries, blueberries and watermelon.

Iced tea & fruit smoothies.

It might sound odd, but I like Mexican and New Mexican food. Since I live in a border town, the selection is world-class. For some reason, spicy works for me when the temp climbs over 40C/100F.

Sweet, juicy, chilled watermelon. Nectarines as well.

Tomato bruschetta is fantastic in the summer.

Oh, and cold mugi-cha (barley tea) to wash it all down. :)

PotPingSu! Korean shaved ice topped with red beans, little rice cakes, a variety of fruits, a bit of condensed milk, and ice cream! A perfect summer treat...

Carne Asada Salad with leafy greens, roasted corn, black beans, cheddar cheese, fresh salsa, scallions, fresh buttermilk ranch dressing, a few chunks of leftover asada pork from the day before. Sometimes with fresh tortillas as a wrap.

for dinner at our house we eat flour tortillas (warm from the griddle) with pureed fresh mangos.
